Terroir
Blend from a selection of the Domaine's terroirs, particularly the plots known as Les Bruyères and En Sauvagny, on grey Lias marl and scree soils.
Vineyard predominantly south-east facing.
Vinification and Ageing
A subtle blend of Chardonnay (70%) and Savagnin (30%).
It takes 36 months' ageing to obtain a veil of yeast in the barrels of Savagnin.
Meanwhile the Chardonnay is aged in wooden tuns prior to blending.

Bouquet
Sparkling golden, bright and clear.
The nose is fragrant and intense with wafts of yellow apples, mirabelle plums, almonds and walnuts.
Palate
Round and full in the mouth. Beautifully fresh, with a distinct, persistent finish, full of the flavours of almonds, walnuts and yellow fruits.
Ageing Potential
From six to ten years.
Wine and Food Pairing
Dried fruits and Comté cheese, a roasted Mont d'Or cheese, any cooked cheese dish, Asian cooking and traditional dishes containing cream.
Best served between 10 and 13°C.
