Vinification and Ageing
These grapes are hand-picked then directly pressed, before fermentation in a stainless steel temperature-controlled vat.
After the malolactic fermentation, the base wine is bottled to undergo its secondary fermentation.
The bottles mature for 36 months on laths prior to disgorging and a dosage of 0.9 g sugar per litre.
